I’ve known potatoes as a root crop popular in almost all dishes, moreover, present in every meal. It can be served as mashed or hashed during breakfast or mixed with menudo, afritada or kaldereta dishes for lunch or could be plain fried for snacks. In some, potatoes are used in casseroles and stews too. In our household, we love to use potatoes with chopsuey, pork/beef giniling or with chicken liver.
Aside from fries and hash browns, I only know that potatoes can be cooked when fresh. Thanks to Potatoes USA, I got to know more dishes that can be spiced up with potatoes not just as fresh but from other forms as well like frozen chips, shreds, standard flakes, standard granules or straight cuts.
Potatoes are GO Foods. An energy-giving food loaded with complex carbohydrates that give our muscles fuel to run, swim, and jump. It contains vitamins and minerals too like Potassium, Protein, Vitamin C, and Vitamin B6. It is also free of cholesterol, fat and sodium. No wonder, this root crop is a great substitute for rice.
Last week, at the The Suite Room Restaurant in Ayala Mall, Cebu, Potatoes USA was introduced to Cebuano entrepreneurs and consumers. I am lucky to witness the event. It is a cooking demo that was started by Ms. Reji Retugal-Onal, the country representative of Potatoes USA. She gave an overview on U.S. Potatoes as well as shared the many nutritional benefits of potatoes and potato dishes.
Highlight of the event was the cooking demo of Chef Paul Sidney Uy together with Chef Karl John Noel where they used U.S. potatoes on all the dishes.
The three dishes that were shared are:
U.S. Potato Crusted Salmon with Truffle Potato Sauce and Fruit Salsa, a fried salmon topped with crusted pre-shredded U.S. Potato with truffle sauce mixed with U.S. Potato and paired with fruit salsa.
U.S. Potato Pudding, U.S. Potato hash brown with batter mixture baked at 350F paired with mangoes and strawberries and U.S. Mashed Potato Truffle, chocolate truffles mixed with Dehydrated Potato Flakes..
The crusted salmon was my favorite and getting to taste it was an indulgence I won’t forget.
