Meaty Pechay Picadillo:
1) SAUTÉ onion, garlic and ground pork and mix in carrots, green peas and pechay.
2) SEASON with pepper, soy sauce and AJI-GINISA® Flavor Seasoning Mix.
3) COOK for 1 minute more.

Tofu Sisig:
1) FRY tofu until golden brown and set aside.
2) SAUTÉ ginger, onion and garlic, add fried tofu and liver spread and mix well.
3) SEASON with sugar and PORKSAVOR® All-in-One Seasoning mix and add chili peppers.

Pork tapa with tomatoes:
1) MARINATE pork in water, sugar, soy sauce, pepper and SARSAYA® Oyster Sauce for an hour or overnight.
2) SAUTÉ onion, garlic and pork.
3) BOIL. Pour the marinate mixture and boil until mixture is thick.

My Work From Home Experience

As we all know, many loses their job due to to COVID-19 crisis but fortunately for us, we were given an opportunity to still work at the comforts of our home. Work from home  is the current option given to continue business but does it work?

Work From Home (WFH)
Its been 65 days since our company implemented the WFH setup as a countermeasure against the COVID-19 crisis. Haven’t been out from the subdivision’s compound since then. My work as a software mostly access web pages, cloud portals or product applications. Work can be done as long as there is an internet connection and VPN access to the company’s sites. It was a considerable option. Thankfully, I share the WFH setup with the husband who is also in IT company.
When going to the office, I had to commute for ~45 min to an hour depending on the traffic. Had to take 3 rides. I am used to the commute but the pandemic, I am now scared to take risk.
Our network provider is Globe with a data capped plan.

Cons:Work From Home Setup - Living RoomOf the places in our home, the living room is the place where the internet signal is at its finest, though nothing beats the network infrastructure at the office. But aside from occasional networks lags especially during huddles thru Teams, or loading issues when accessing tools or sometimes being disconnected from the VPN, I think our internet connection is doing good. Though data usage has capping, we use this reason to limit our kids from screen time during working hours.

We also let the kids stay here so we can monitor the kid’s school related activities while we are at our screens. We can immediately entertain their questions. We can bond.

Also, humidity during summertime makes you hot and sweat. We only have 1 electric fan to we have to share. Aside from opening windows or doors, we are of the household that relies on electric fans to keep the room cool.

So being together in the same area would means  unavoidable background noises from simultaneous meetings or questions from kiddos or from news from radios. I’m not complaining, these are my breather – to get chikas from husbands’s company, talk with my kids or get updated from the crisis or happening in our community or the country.

Prepping for family meals is also challenging for a mom who lack this skill. I miss my office lunch dilemma on whether to eat my baon or eat at the canteen. I am glad though this is the husband’s forte 🙂 however, it helps to have a menu guide too.

Pros:
Work From Home - MultiTasking
I am one of the workers who cheer for WFH option because with WFH I have zero commute time. In fact, looks like I have more time 🙂 I don’t have to rush every morning just to avoid the traffic rush. I can work with my pajamas. I can manage my time and be more flexible. Though there was an agreed working time being set but at home I can be early than the agreed time to avoid network congestion when accessing the tools or extend late in case I have some urgent house chores.

Multi-tasking or juggling between work and home can be painful but I consider this an opportunity to have more quality time with family while working. I have my +1 during my meetings, my son seems interested on whom I am talking to and keeps on asking trivial questions. It might be annoying at times so I rely on school-related activities to at least ease their restlessness.  I can attend huddles while cutting my kid’s fingernails 🙂

Additionally, WFH also taught my kids to be more responsible in doing house chores. They learn to cook meals, wash the dishes, mop the floor, fix the bed and other mundane house chores. Also, you get to observed you’re kids and learn more about them. They are more subtle in their sibling quarrel considering they know we are around.

MAYOR ISKO GOES GREEN

Mayor ISKO MORENO threaded an impoverished area in Manila while growing up. As the elected City Mayor of Manila, more popularly known to Filipinos as Yorme, he never wavered amidst adversities hurled at him for taking several steps in making a better version of the city he fondly calls his home and crowning glory. Yorme recently signed Ordinance 8607 declaring the permanence of Arroceros Forest Park dubbed as the “Last lung of the City”, home to 61 tree varieties and 8,000 ornamental plants. The new ordinance forbids the cutting of trees and dumping of waste within the park. Part of his plan is to allocate P1 million solely for its preservation and maintenance away from urbanization and all these efforts stem from his greater plan to make Manila a “Green City”.

Fight or Flight: Musings from a Working Momma

It’s been 3 months now since I defined myself as extremely sad, for I don’t want to call myself “depressed” – I don’t want to succumb to the thought that something is beyond my control.

Back track to 3 months ago.
Things were fine and dandy. But then the time came – where times where I caught myself dragging my feet to work with the fear of client complain, for that has been a pattern and picture my superior created. Things started out well, UNTIL, I started to question game plans and other means of running the business that may affect the integrity of the numbers. I am used to a culture of expressing ideas, contrarian or not – however, I’d consider it the cause of my Waterloo.

I had shortcomings too, I was not a perfect employee, I missed deadlines and deliverables – but I did my best to contribute to the business (with little to no help) and corrected what needs to be improved. I was given chances of my failings and was once highly favored – but things went south. In my own understanding, I did my best to have a player mindset and avoiding victim mindset all the time. Trying to see the good. Things felt uncontrollable, I started to question my capabilities, the recognitions and even my existence. I see myself regressing.

I was fighting my inner demons to survive.

I wanted to take flight for I have fought enough and that the battle is not worth fighting for anymore. But I have nowhere to go for I feel that I’m not good enough and that I have nothing to offer. I cried myself to sleep, cried in the shower – never been so helpless and useless. Even questioned my sanity.

“Flight “day came – a blessing in disguise. I was not ready to let go but I must for my sake, my sanity’s sake. Still fighting. Still crying myself in the shower. As I slowly immersed myself with the positive environment, I’ve come to comprehend the after effect of letting a toxic person in my head. I have recently come across “gaslighting” and eureka (the perfect description)– I was, we were gaslit.

And it was all coming back to me – controlling my social media posts, asking someone to check my social media (for reasons unknown to me), incident report filed, uncommunicated changes at work, twisted information, comments that make me feel uncapable, gossip, and the list goes on. Though it was not all negative, as mentioned, I was once favored to the extent of having a feeling of debt of gratitude (but repayment is a must).

I have come to accept that there’s something wrong and I must do something.
I’m still healing and on the process of recovering. I might have received his/the message incorrectly, but it has led me to a state I don’t wanna revisit. Never again – I was at my worst.

Saddest.

Some sad people do not broadcast that they are sad – explaining is hard to do. They might not share due to the fear of judgement. Please, reach out to your friends, to your love ones.
Ask them “musta na?”, I know for sure they’ll reply back with “okay lang” but at least you’ve asked.

Exploring Cebu Ocean Park

Last quarter of 2019, we had a chance to take a peek to one of Cebu’s newest family attraction – Cebu Ocean Park. Cebu Ocean Park is a marine life and land animal theme park. It houses a wide variety of marine species as well as insects, reptiles and lories. It is located at South Road Properties (SRP), Cebu City near SM Seaside City Cebu and Chapel of San Pedro Calungsod.

Courtesy of Ms. Kat and Family :D, we were able to enjoy an afternoon full of animal discovery, exploration and admiration.

Our pass was valid only on weekdays so we look for schedules that wont disrupt the kid’s school schedule. We went there late in the afternoon, right after school work. Being on its soft opening, Cebu Ocean Park already attracts attention, thus expect a large crowd of guests.

You will be greeted by jungle theme as you enter the park. Lots of lush green grass covers the wall of the ground floor. Crocodiles and freshwater fishes are displayed here.

Potatoes USA in Cebu

I’ve known potatoes as a root crop popular in almost all dishes, moreover, present in every meal. It can be served as mashed or hashed during breakfast or mixed with menudo, afritada or kaldereta dishes for lunch or could be plain fried for snacks. In some, potatoes are used in casseroles and stews too. In our household, we love to use potatoes with chopsuey, pork/beef giniling or with chicken liver.

Aside from fries and hash browns, I only know that potatoes can be cooked when fresh. Thanks to Potatoes USA, I got to know more dishes that can be spiced up with potatoes not just as fresh but from other forms as well like frozen chips, shreds, standard flakes, standard granules or straight cuts.

Highlight of the event was the cooking demo of Chef Paul Sidney Uy together with Chef Karl John Noel where they used U.S. potatoes on all the dishes.

It’s been years since we were able to wander together. This year, we had an opportunity, so we decided to re-create the photo almost 10 years ago and join 10-year challenge hype early this year. Just for fun 🙂

Did aging hit us real hard?

We thought it’s more than ageing.
It’s more of the events and the experiences in 10yrs.
Ganap kumbaga!

There were changes, of course, it is inevitable.
2 weddings;
6 more grandchildren for our parents;
Christmases;
A whole lot of birthdays!!!
Not to mention, 2 Miss Universe crowns and another win for Manny Pacquiao

And…

There were life experiences we never thought would happen,
Overseas work;
Work Reduction Program;
Fire Incidents;
Premature birth;
Death of loved ones;

We often call them the ups and downs of life.
We cry, and we smile, and we laugh like there is no tomorrow. Life must go on so better enjoy the ride, eh!

Even after 10 years, we still have a lot to learn and its how we react to the experience we grow. Just like the saying goes that it’s the same boiling water that makes the egg hard and makes the potato soft.
